Vegetarian Moroccan Mixed Vegetable Tagine

Instructions

  1. Slice the onion, tomatoes, carrots, zucchini, and potatoes.

  2. Toss the sliced carrots, zucchini, and potatoes with salt, ginger, pepper, turmeric, and optional saffron threads.

  3. Pour half the oil into a tagine or skillet. Layer the onion slices, then the tomato slices.

  4. Conically arrange the seasoned carrots, potatoes, and zucchini over the tomatoes. Add optional olives and drizzle with the remaining oil.

  5. Add 1 cup of water (rinsing the spice bowl) to the tagine and cover.

  6. Heat over medium-low (using a diffuser for tagine) until simmering.

  7. Reduce heat to maintain a low simmer. Cook undisturbed for 1 to 1.5 hours until vegetables are tender; reduce excess liquid if desired.

  8. Garnish with chopped parsley or cilantro.

  9. Serve warm.
