Vegetarian Moroccan Lentils Recipe

Instructions

  1. Combine all ingredients with 2 liters of water in either a pressure cooker or a heavy-bottomed pot.

  2. Bring the mixture to a simmer.

  3. Cover and cook until the lentils are tender: 35-40 minutes under pressure for a pressure cooker, or approximately 1.5 hours simmering over medium heat for a pot.

  4. Reduce excess liquid to achieve an ample sauce consistency if needed, then adjust seasoning to taste.

  5. Serve in bowls, garnished with fresh parsley.
