Vegetarian Minestrone Soup

Instructions

  1. In a large pot, combine vegetable broth, diced tomatoes, basil, oregano, carrots, celery, onion, zucchini, green beans, garlic, and one bay leaf.

  2. Bring to a low simmer and cook for 45 to 60 minutes, or until vegetables are tender, stirring occasionally.

  3. Stir in salt, pepper, and macaroni pasta. Increase heat to medium-low and simmer for 10 to 20 minutes, or until pasta is cooked.

  4. Remove the bay leaf before serving.
