Vegetarian Meatless Frito Pie

A quick and easy vegetarian casserole, inspired by Frito pie, uses canned vegetarian chili for a simple dinner.

Instructions

  1. Preheat oven to 350 F.

  2. Lightly crush Fritos and arrange in a single layer in a casserole dish.

  3. Spread vegetarian chili evenly over the Fritos.

  4. Add optional toppings such as chopped onion, diced tomato, shredded lettuce, or jalapeño peppers.

  5. Sprinkle shredded cheese as the top layer.

  6. Bake for 15 to 20 minutes, until cheese is melted.

  7. Serve immediately, optionally topping with sour cream, green onions, or cilantro.
