Vegetarian Lentil Soup Recipe

Instructions

  1. In a large pot, sauté onions and carrots in oil for 3-5 minutes until translucent.

  2. Stir in vegetable broth, lentils, thyme, bay leaves, salt, and pepper.

  3. Bring to a simmer, then cover and cook for approximately 45 minutes until lentils are tender.

  4. Remove bay leaves; optionally stir in lemon juice before serving.

  5. Adjust seasoning with additional salt and pepper as needed.
