Vegetarian Lentil Soup Recipe
A hearty, high-protein lentil soup that is vegetarian, vegan, low-calorie, low-fat, and can be made gluten-free.

In a large pot, sauté onions and carrots in oil for 3-5 minutes until translucent.

Stir in vegetable broth, lentils, thyme, bay leaves, salt, and pepper.

Bring to a simmer, then cover and cook for approximately 45 minutes until lentils are tender.
