Vegetarian Indian Palak Paneer With Ricotta

Instructions

  1. In a large saucepan, sauté garlic and onion in 2 tbsp olive oil over medium heat for 1-2 minutes.

  2. Stir in ginger, cumin, coriander, and turmeric; cook for 1 minute.

  3. Reduce heat to medium-low. Stir in sour cream, then gradually add spinach until cooked down, about 10 minutes.

  4. In a separate skillet, fry spoonfuls of ricotta in 2 tbsp olive oil until lightly browned.

  5. Add the fried ricotta to the spinach mixture.

  6. Cover and cook on medium-low for 5-7 minutes.

  7. Season with salt to taste and serve hot.
