Vegetarian Chana Masala With Spinach

Instructions

In a large skillet, sauté onions and garlic in olive oil until soft, about 3 to 5 minutes.

Add canned chickpeas, lemon juice, curry powder, coriander powder, ground cumin, and garam masala.

Simmer for 10 to 15 minutes, stirring occasionally and adding water as needed, until the chickpeas are tender.

Reduce heat, then add spinach and cover for 2 to 4 minutes to wilt.
