Vegetarian Ceviche Salad (Ceviche de Verduras) Recipe

Instructions

  1. Thinly slice onion into half-moons; marinate in salt water with the juice of 1 lime for 20 minutes.

  2. Chop red pepper and chile pepper; combine with corn.

  3. Cube avocado and mozzarella into 1/2-inch pieces; add to the vegetable mixture.

  4. Drain marinated onions; add to the other vegetables.

  5. Toss salad with the juice of the remaining 2 limes, salt, and pepper.

  6. Cover and chill salad for 15 minutes.

  7. Coarsely chop cilantro; toss into the salad.

  8. Serve immediately.
