Vegetarian Bean and Barley Vegetable Soup

Instructions

In a large pot, sauté onions and garlic in oil for 1-2 minutes.

Add celery, carrots, and other vegetables; cook for 3-5 minutes.

Pour in vegetable broth and all remaining ingredients; bring to a simmer.

Reduce heat to medium-low, cover, and simmer for 30-60 minutes, stirring occasionally, until barley is soft.

Remove bay leaves before serving.

Taste and season with additional spices, salt, or pepper as desired.
