Instructions

  1. Start boiling 2 cups of water in a saucepan; add rice, stir, cover, turn off heat, and let stand for 20 minutes.

  2. Drain the cooked rice.

  3. In a large frying pan, heat olive oil over medium heat and sauté onion and garlic until transparent (4-5 minutes).

  4. Stir in red and green bell peppers and tomato; cook for 3 more minutes.

  5. Add the soaked rice and vegetable broth; bring to a boil, then reduce to a simmer.

  6. Stir in salt, paprika, and turmeric; cover and simmer until rice is tender (about 20 minutes).

  7. Add peas and artichoke hearts; cook for 1 minute more.
