Vegetable Samosas
Easy vegetable samosas utilize puff pastry to achieve classic flavors without the need for traditional dough preparation and frying.

Instructions

Preheat the oven to 400 F and thaw puff pastry for 40 minutes.

Boil potatoes in water for 10-15 minutes until tender, then drain.

In a skillet, heat oil and sauté onion for 4-5 minutes until soft.

Add peas, carrots, garam masala, and curry powder; cook for 3-4 minutes.

Stir in drained potatoes and salt, cooking for 2-3 minutes to blend flavors, then remove from heat.

Prepare a baking sheet with parchment paper or spray, and have a bowl of water with a pastry brush ready.

Unfold puff pastry on a floured surface and cut into 9 equal rectangles.

Spoon 1 tablespoon of filling onto the center of each rectangle.

Brush one long and one short side of each rectangle with water.

Fold pastries into triangles, sealing the filling, and arrange on the prepared baking sheet.

Bake for 15-20 minutes until golden brown.
