Vegetable Fried Rice With Cashews

Instructions

  1. Heat oil in a wok or sauté pan over medium-high heat.

  2. Add ginger and stir until fragrant.

  3. Add onion, stir-fry for 2 minutes until softened.

  4. Push the onion to the sides, add peas or corn to the center, and stir-fry for 1 minute.

  5. Push vegetables to the sides, add red bell pepper to the center, and stir-fry for 1 minute.

  6. Add rice to the pan, stirring for 2 minutes until heated through.

  7. Stir in soy sauce and pepper.

  8. Stir in cashews.

  9. Stir in green onion and cook for 1 minute, then serve.
