Vegetable Fried Rice With Cashews
A quick and simple vegetable fried rice recipe, enhanced with the addition of cashews for a flavorful meal.

Instructions

Heat oil in a wok or sauté pan over medium-high heat.

Add ginger and stir until fragrant.

Add onion, stir-fry for 2 minutes until softened.

Push the onion to the sides, add peas or corn to the center, and stir-fry for 1 minute.

Push vegetables to the sides, add red bell pepper to the center, and stir-fry for 1 minute.

Add rice to the pan, stirring for 2 minutes until heated through.

Stir in soy sauce and pepper.

Stir in cashews.

Stir in green onion and cook for 1 minute, then serve.
