Vegetable Chow Mein

Instructions

Start boiling a large pot of salted water.

Combine sauce ingredients in a small bowl and set aside.

Add noodles to boiling water and boil for 2 minutes.

Drain noodles, rinse with cold water, and toss with 1 tablespoon of oil.

Heat a large nonstick pan with 2 tablespoons of oil; sauté onion and bell pepper for 2 minutes until tender.

Add zucchini and mushrooms, stir-fry for 5 minutes until golden brown.

Transfer cooked vegetables to a bowl.

Reheat the pan with the remaining 2 tablespoons of oil; sauté ginger and garlic for several seconds.

Add noodles and stir-fry for 5 minutes until heated through.

Return vegetables to the pan with noodles, add sauce, and toss until well combined and heated through.

Serve immediately.
