Vegetable Chow Mein

Instructions

  1. Start boiling a large pot of salted water.

  2. Combine sauce ingredients in a small bowl and set aside.

  3. Add noodles to boiling water and boil for 2 minutes.

  4. Drain noodles, rinse with cold water, and toss with 1 tablespoon of oil.

  5. Heat a large nonstick pan with 2 tablespoons of oil; sauté onion and bell pepper for 2 minutes until tender.

  6. Add zucchini and mushrooms, stir-fry for 5 minutes until golden brown.

  7. Transfer cooked vegetables to a bowl.

  8. Reheat the pan with the remaining 2 tablespoons of oil; sauté ginger and garlic for several seconds.

  9. Add noodles and stir-fry for 5 minutes until heated through.

  10. Return vegetables to the pan with noodles, add sauce, and toss until well combined and heated through.

  11. Serve immediately.
