Instructions

  1. Preheat the oven to 350 F; lightly oil and flour two 8-inch springform pans.

  2. Beat dairy-free margarine until creamy; add sugar and beat for 3-4 minutes until fluffy.

  3. Stir in soy sour cream, vanilla, and lemon juice. Whisk powdered egg replacer with 1/3 cup warm water until gooey, then add to the batter and beat until smooth.

  4. In a separate bowl, sift flour, baking soda, and salt. Add these dry ingredients to the wet mixture, alternating with coconut milk, until just combined.

  5. Pour the batter evenly into the prepared pans.

  6. Bake for 22-25 minutes, or until a toothpick inserted into the center emerges clean.

  7. Cool cakes in pans for 10 minutes on a wire rack, then loosen edges with a knife. Allow cakes to cool completely before removing and frosting.
