Vegan Tofu Tikka Masala

A vegan take on classic British-Indian tikka masala features tofu prepared in a savory spice sauce.

Instructions

  1. Preheat oven to 350 F.

  2. Cut pressed tofu into bite-sized cubes.

  3. Whisk together 4 ounces of soy yogurt, oil, lemon juice, turmeric, garam masala, chili powder, and salt for the marinade.

  4. Coat the tofu cubes with the marinade and refrigerate for at least 1 hour.

  5. Bake the marinated tofu for approximately 30 minutes, turning once or twice.

  6. In a large skillet, heat 1 tablespoon of oil.

  7. Add tomatoes, cumin, paprika, 4 ounces of soy yogurt, and any remaining marinade; cook for about 8 minutes until thickened.

  8. Stir in the baked tofu until heated through and coated in the tikka masala sauce.

  9. Serve with steamed rice or naan.
