Vegan Tofu Tikka Masala
A vegan take on classic British-Indian tikka masala features tofu prepared in a savory spice sauce.

Instructions

Preheat oven to 350 F.

Cut pressed tofu into bite-sized cubes.

Whisk together 4 ounces of soy yogurt, oil, lemon juice, turmeric, garam masala, chili powder, and salt for the marinade.

Coat the tofu cubes with the marinade and refrigerate for at least 1 hour.

Bake the marinated tofu for approximately 30 minutes, turning once or twice.

In a large skillet, heat 1 tablespoon of oil.

Add tomatoes, cumin, paprika, 4 ounces of soy yogurt, and any remaining marinade; cook for about 8 minutes until thickened.

Stir in the baked tofu until heated through and coated in the tikka masala sauce.

Serve with steamed rice or naan.
