Instructions

  1. Preheat the oven to 350 F.

  2. Cook manicotti noodles according to package directions, then drain, rinse, and pat dry.

  3. Combine mashed tofu, garlic, soy milk, olive oil, lemon juice, sugar, salt, pepper, parsley, and optional spinach in a large mixing bowl.

  4. Spread 2 cups of spaghetti sauce into a 9x13-inch baking pan.

  5. Fill each manicotti with the tofu mixture and arrange them in a single layer in the prepared pan.

  6. Pour the remaining 2 cups of spaghetti sauce over the filled noodles.

  7. Cover the pan tightly with aluminum foil and bake for 30 minutes, or until the sauce bubbles.
