Vegan Tofu Chocolate Cake

Instructions

  1. Preheat the oven to 350 F and grease two 9-inch round cake pans.

  2. Sift flour, cocoa powder, baking powder, baking soda, and salt together in a bowl.

  3. Blend tofu until creamy, then add maple syrup and oil and blend until smooth.

  4. Combine the tofu mixture, almond milk, and boiling water with the sifted dry ingredients, stirring until just combined.

  5. Pour the batter into the prepared pans and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool cakes in pans for 15-20 minutes on a wire rack, then transfer to the rack to cool completely before frosting with a dairy-free frosting.
