Vegan Strawberry Sorbet

Instructions

  1. Begin by dissolving sugar and cornstarch in water in a saucepan over low heat; raise heat to boil and cook for 15 minutes until a thick syrup forms, then cool.

  2. Thoroughly mix the cooled syrup with pureed berries.

  3. Place the mixture in a container and freeze uncovered for 5 to 6 hours until solid.

  4. Cut the frozen sorbet into chunks and process in a blender or food processor until smooth.

  5. Scoop the smooth sorbet back into the container and freeze for another 5 hours; serve and store.
