Vegan Spinach Artichoke Dip

Instructions

  1. Preheat oven to 400 F if serving the dip hot.

  2. In a small pan over medium heat, warm olive oil. Sauté minced garlic for one minute, then add spinach and cook for two minutes until wilted; remove from heat.

  3. Drain and rinse cashews. Transfer the garlic-spinach mixture to a blender, adding cashews and all other ingredients. Blend on low until smooth but still showing spinach flecks.

  4. Serve immediately for a chilled dip. For a hot dip, pour into a baking dish and heat in the preheated oven for 12-15 minutes until gently bubbling.
