Instructions
-
Preheat the oven to 400 F and grease a baking sheet. Separately, start boiling 7 cups of water with baking soda in a saucepan.
-
Combine yeast, warm water, sugar, and salt in a large bowl, stirring until dissolved; let stand 5 minutes until bubbly.
-
Gradually add flour to the yeast mixture until a soft, non-sticky dough forms.
-
Turn dough onto a work surface and knead for 3-4 minutes until smooth and elastic.
-
Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour until doubled.
-
Punch down the dough, divide into 8 equal pieces, and roll each into a 1/2-inch thick rope.
-
Form each rope into a pretzel shape by making a U-shape, crossing the ends, pressing them together, then flipping the twisted part to attach to the U's base.
-
Boil each pretzel individually for 30 seconds, then transfer to the prepared baking sheet.
-
Sprinkle with coarse salt and bake for 11-12 minutes until golden brown.
-
Cool the pretzels slightly before serving.
