Instructions

  1. Preheat the oven to 400 F and grease a baking sheet. Separately, start boiling 7 cups of water with baking soda in a saucepan.

  2. Combine yeast, warm water, sugar, and salt in a large bowl, stirring until dissolved; let stand 5 minutes until bubbly.

  3. Gradually add flour to the yeast mixture until a soft, non-sticky dough forms.

  4. Turn dough onto a work surface and knead for 3-4 minutes until smooth and elastic.

  5. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour until doubled.

  6. Punch down the dough, divide into 8 equal pieces, and roll each into a 1/2-inch thick rope.

  7. Form each rope into a pretzel shape by making a U-shape, crossing the ends, pressing them together, then flipping the twisted part to attach to the U's base.

  8. Boil each pretzel individually for 30 seconds, then transfer to the prepared baking sheet.

  9. Sprinkle with coarse salt and bake for 11-12 minutes until golden brown.

  10. Cool the pretzels slightly before serving.
