Vegan Seitan Tacos With Roasted Vegetables

Instructions

  1. Preheat broiler.

  2. Saute seitan strips in 1 tablespoon oil for 5-6 minutes until browned. Stir in soy sauce, chipotle, paprika, cumin, and chili powder; cook for 1-2 minutes.

  3. Toss chopped zucchini, red bell pepper, and mushrooms with the remaining 1 tablespoon oil, salt, and pepper.

  4. Arrange seasoned vegetables on a baking sheet and broil for 10-15 minutes until tender and slightly browned.

  5. Warm corn tortillas. Fill each with cooked seitan, roasted vegetables, sliced tomato, and additional preferred taco toppings like guacamole.
