Instructions

  1. Preheat the oven to 375 F (optional) and toast pecans for 7-10 minutes.

  2. Prepare a cookie sheet by greasing or lining, then set aside a large spoon and a candy thermometer.

  3. Combine all ingredients in a heavy 2- or 3-quart saucepan.

  4. Heat, stirring until sugar fully dissolves; scrape down any sugar crystals from the pan sides with a rinsed spoon.

  5. Attach the candy thermometer and cook over medium heat, stirring often, until the mixture reaches 235 F.

  6. Remove from heat immediately and stir vigorously for 1-2 minutes until the mixture loses its sheen and begins to separate from the pot.

  7. Quickly drop spoonfuls onto the prepared surface.

  8. Allow to cool until firm.
