Vegan Peach Pie
A vegan peach pie featuring fresh peaches, prepared with an entirely plant-based ingredient list.

Instructions

Preheat oven to 400 F.

Grease a 9-inch pie plate with plant-based margarine.

Roll out half the pie dough, fit into the plate, form edges, and freeze for 15 minutes.

Toss peaches with lemon juice in a large bowl.

Sift flour, sugar, cinnamon, and salt in a separate bowl.

Add dry mixture to peaches and mix until incorporated.

Pour peach mixture into the chilled crust.

Roll out remaining dough, place over pie, fold edges under, and seal.

Brush top crust with soy milk and sprinkle with sugar.

Bake for 10 minutes, then reduce heat to 350 F and bake for an additional 30-35 minutes.

Cool pie on a rack, then serve warm or cold.
