Vegan Mushroom Cream Sauce For Pasta

Instructions

  1. In a saucepan over medium heat, melt 1 tablespoon of vegan margarine, then sauté mushrooms and garlic for 4 to 5 minutes until soft; remove and set aside.

  2. In the same pan, melt the remaining 1 tablespoon of vegan margarine over medium heat.

  3. Stir in flour to create a paste and cook for 1 minute, then gradually whisk in soy milk until the mixture is smooth and thick.

  4. Return the sautéed mushrooms, and add fresh parsley, lemon juice, salt, and pepper; cook for 1 to 2 minutes until the sauce thickens.

  5. Serve the warm mushroom cream sauce over cooked pasta or noodles, optionally garnished with fresh parsley.
