Vegan Mushroom Bean Burger

Instructions

  1. In a skillet, heat 1 tablespoon oil over medium heat, then sauté diced onion and garlic for 3-5 minutes until soft.

  2. Stir in green onions, cumin, and mushrooms; cook for 5 minutes until browned, adding more oil if necessary. Set aside.

  3. Mix warm water and egg replacer. Mash beans in a separate bowl (or coarsely process), then combine with the egg replacer mixture.

  4. Combine the mashed bean mixture with the reserved onion-mushroom mixture, parsley, salt, and pepper. Mix until homogeneous.

  5. Form the mixture into 1-inch thick patties.

  6. Heat remaining 2 tablespoons oil in a skillet or grill pan over medium heat. Cook patties for about 3 minutes per side.

  7. Serve patties on buns with fresh vegetables.
