Vegan Latkes

Vegan potato pancakes, prepared with an egg replacer, offer a traditional and satisfying alternative for Hanukkah.

Instructions

  1. Rinse and scrub potatoes clean.

  2. Peel and grate the potatoes into a large bowl.

  3. Combine grated potatoes with minced onion, prepared egg replacer, salt, black pepper, flour, and baking powder; stir thoroughly.

  4. Heat a few tablespoons of oil in a large frying pan.

  5. Drop 2-3 tablespoon portions of the mixture into the hot oil, then flatten into pancakes.

  6. Cook for 3-4 minutes per side until golden brown, adding more oil as necessary.

  7. Serve latkes with applesauce.
