Vegan Latkes

Rinse and scrub potatoes clean.

Peel and grate the potatoes into a large bowl.

Combine grated potatoes with minced onion, prepared egg replacer, salt, black pepper, flour, and baking powder; stir thoroughly.

Heat a few tablespoons of oil in a large frying pan.

Drop 2-3 tablespoon portions of the mixture into the hot oil, then flatten into pancakes.

Cook for 3-4 minutes per side until golden brown, adding more oil as necessary.
