Instructions

  1. Soak basmati rice in water for 20 minutes, then drain.

  2. In a sauté pan over medium heat, warm oil. Add cinnamon, bay leaf, cumin seeds, whole cloves, and peppercorns; toast for 10-15 seconds.

  3. Stir in chopped onion and cook for 6-8 minutes until tender.

  4. Add the drained rice, stirring to toast for 20-30 seconds until lightly browned.

  5. Pour in 2 cups of water and bring to a boil.

  6. Reduce heat to low, cover the pan, and simmer for 15-20 minutes until the water is absorbed and rice is cooked.
