Vegan Impossible Swedish "Meatballs" Recipe

Instructions

  1. Combine plant-based ground, chopped onions, breadcrumbs, and coconut milk in a bowl; allow breadcrumbs to soak.

  2. Mix in nutritional yeast, onion powder, garlic powder, salt, and pepper until well dispersed.

  3. Form the mixture into 1-inch balls and arrange them on a parchment-lined baking sheet.

  4. Heat olive oil in a large sauté pan over medium heat, then brown the meatballs for approximately 5 minutes total.

  5. Remove browned meatballs from the pan and set aside.

  6. In the same pan, melt vegan butter over medium-high heat. Whisk in flour and cook for two minutes, stirring often.

  7. Stir in garlic powder and onion powder.

  8. Gradually whisk in vegetable bouillon and water until smooth.

  9. Incorporate coconut milk, soy sauce, mustard, and pepper; adjust salt to taste.

  10. Heat and stir the sauce over medium heat until thickened and bubbling.

  11. Return meatballs to the pan and cook for 3 minutes, or until heated through.

  12. Garnish with parsley and serve.
