Vegan Hush Puppies

Instructions

Prepare the batter: In a large bowl, whisk egg replacer and soy milk. In a separate small bowl, combine cornmeal, flour, salt, black pepper, baking powder, and sugar. Add dry ingredients to wet, mix well, then stir in corn, green onions, and optional jalapeño.

Pan-Fried Method: Start heating four inches of oil in a large Dutch oven to 360 F.

Drop tablespoon-sized batter portions into the hot oil in batches.

Cook for 4-5 minutes, turning until golden brown.

Remove, drain on paper towels, and serve immediately.

Baked Method: Preheat oven to 425 F.

Grease or line a cookie sheet.

Spoon tablespoon-sized batter portions onto the prepared sheet.

Bake 15-20 minutes, until golden brown and a toothpick comes out clean.

Remove from oven, cool slightly, and serve immediately.
