Vegan Hush Puppies

Instructions

  1. Prepare the batter: In a large bowl, whisk egg replacer and soy milk. In a separate small bowl, combine cornmeal, flour, salt, black pepper, baking powder, and sugar. Add dry ingredients to wet, mix well, then stir in corn, green onions, and optional jalapeño.

  2. Pan-Fried Method: Start heating four inches of oil in a large Dutch oven to 360 F.

  3. Drop tablespoon-sized batter portions into the hot oil in batches.

  4. Cook for 4-5 minutes, turning until golden brown.

  5. Remove, drain on paper towels, and serve immediately.

  6. Baked Method: Preheat oven to 425 F.

  7. Grease or line a cookie sheet.

  8. Spoon tablespoon-sized batter portions onto the prepared sheet.

  9. Bake 15-20 minutes, until golden brown and a toothpick comes out clean.

  10. Remove from oven, cool slightly, and serve immediately.
