Assemble sandwiches by placing 2 ounces of dairy-free cheese on 4 bread slices, then topping with the remaining slices and pressing firmly.

Lightly oil a nonstick pan with olive oil, heat over medium-high, and add the sandwiches.

Add 1 tablespoon of water to the pan, cover, and steam for 30 seconds to 1 minute to melt the cheese.
