Start boiling a pot of water for the potatoes.

Boil the potatoes until tender, then drain, cool, and chop into 1-inch pieces.

In a large skillet, cook the vegetarian bacon substitute in oil until crispy, then crumble and set aside.

To the skillet with remaining oil, add sugar, flour, water, vinegar, and mustard, whisking over low heat until the mixture thickens.
