Vegan Frijoles Negros (Black Beans)

Instructions

  1. Soak black beans and 1 green bell pepper in 8 cups of water for 8 hours or overnight; alternatively, skip soaking.

  2. Bring the beans, pepper, and water to a boil, then reduce to a simmer and cook, covered, for 1.5 hours until tender.

  3. Blend the remaining green bell pepper, onion, garlic, oregano, cumin, bay leaf, and some cooking water until smooth to form the sofrito.

  4. Stir the sofrito into the beans. Bring to a boil, then reduce to a simmer.

  5. Add salt, wine, vinegar, and sugar. Simmer uncovered for approximately 2 more hours until the mixture thickens.

  6. Stir in olive oil just before serving over steamed rice.
