Vegan Creamed Corn Recipe

Instructions

  1. Cut kernels and scrape pulp from corn ears into a bowl.

  2. Blend half of the corn kernels and pulp until smooth.

  3. In a large saucepan, combine remaining whole corn, blended corn, and soymilk; simmer 8-10 minutes, then stir in salt and sugar.

  4. In a small skillet, melt vegan margarine over low heat, then add flour and stir to form a thick paste.

  5. Transfer the paste to the corn mixture and heat, stirring frequently, until thickened (3-4 minutes).

  6. Season with cayenne, chili powder, red pepper flakes, salt, or sugar to taste, then serve hot.
