Vegan Chocolate Mousse Recipe

Scrape solid coconut cream from cans into a mixer bowl, reserving the liquid coconut milk for another use.

Sift cocoa powder, confectioners' sugar, and salt into a separate medium bowl.

Beat the solid coconut cream until very smooth and soft peaks appear (approximately 2 minutes).

Remove 1/4 cup of the whipped cream, cover, and refrigerate for topping the mousse.

Slowly sprinkle the sifted cocoa-sugar mixture into the remaining coconut cream on low speed until combined, then beat until stiff peaks form.

Beat in vanilla extract until just combined.

Divide the mousse among four dessert cups.

Refrigerate for one hour, or until firm, then top with the reserved whipped cream before serving.
