Instructions

  1. Preheat the oven to 350 F.

  2. Line a 13x9-inch pan with two overlapping strips of parchment paper, leaving a 2-inch overhang, coating each layer with cooking spray.

  3. Sift together flour, sugar, cocoa powder, baking powder, and salt in a medium bowl.

  4. In a large bowl, beat mashed avocado, soy milk, water, and vanilla extract; then add dry ingredients and mix well.

  5. Pour batter into the prepared pan and bake for 30 to 35 minutes until a toothpick inserted into the center comes out with few crumbs. Cool completely in the pan.

  6. Lift cooled brownies from the pan using the parchment overhangs. Cut into 12 to 16 pieces on a cutting board, then remove parchment and transfer to a serving dish.
