Vegan Chickpea Veggie Burgers

A simple vegetarian and vegan chickpea burger uses flour to bind garbanzo beans and vegetables into flavorful patties.

Instructions

  1. Drain chickpeas, reserving 4-5 tablespoons of liquid.

  2. Pulse chickpeas 3-4 times in a food processor until crumbly.

  3. Transfer pulsed chickpeas to a large bowl. Mix with celery, carrot, onion, garlic powder, flour, salt, and pepper until combined.

  4. Add reserved chickpea liquid, 1 tablespoon at a time, until the mixture holds together for patties.

  5. Form 4 patties and place on a parchment-lined baking sheet. Freeze for a few minutes to firm them.

  6. Heat oil in a skillet or grease a grill pan.

  7. Cook patties 3-4 minutes per side until golden.

  8. Serve on buns or lettuce wraps with desired toppings.
