Vegan Ceviche Recipe
A unique ceviche features hearts of palm as its base, with a marinade infused with seaweed for ocean flavor and mushrooms for umami.

Instructions

Soak seaweed in lime juice for 5 minutes until soft.

Strain seaweed, pressing out lime juice; set both aside separately.

Marinate onions in the lime juice for 5 minutes.

In a large bowl, combine marinated onion, seaweed, hearts of palm, cucumber, avocado, tomatoes, serrano chile, cilantro, oil, and soy sauce.

Fold ingredients, then taste and adjust soy sauce or salt if needed; marinate for 5 minutes.

Serve with tostadas, tortilla chips, or saltines.
