Instructions

  1. Preheat the oven to 400 F.

  2. Whisk olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper in a bowl.

  3. Toss chickpeas and cauliflower florets with the spice mixture to coat.

  4. Spread the seasoned cauliflower and chickpeas onto a greased sheet pan.

  5. Bake for 15 minutes, until golden brown and crisp.

  6. While baking, blend all chipotle crema ingredients until smooth.

  7. Assemble tacos by topping tortillas with baked cauliflower and chickpeas, slaw, crema, avocado, and jalapeño.
