Vegan Caramels

Instructions

  1. Grease an 8-inch or 9-inch square pan.

  2. Combine sugar, coffee creamer or coconut cream, and corn syrup in a tall, heavy saucepan. Simmer over medium heat, stirring for 5 minutes until the sugar dissolves.

  3. Add margarine and stir until the mixture boils (about 5 minutes), then cease stirring.

  4. Boil the mixture without stirring, monitoring carefully, until a candy thermometer reads 250°F.

  5. Once at 250°F, immediately stir in vanilla and cardamom (if using), then quickly pour into the prepared pan.

  6. Cool at room temperature for 10 minutes, then refrigerate for about an hour until firm. Freeze for 5 minutes before cutting into squares to reduce stickiness.

  7. Wrap individual squares in waxed paper and store in the refrigerator for up to 1 month.
