Instructions

  1. Prepare an ice bath in a pan suitable for a small saucepan.

  2. In a small saucepan over medium-high heat, combine non-dairy milk, sugar, maple syrup, soy margarine, vanilla, and salt.

  3. Bring to a boil and cook for 10 minutes, or until medium amber in color.

  4. Immediately submerge the saucepan in the ice bath to stop the cooking process.

  5. Transfer the caramel into a heatproof container and refrigerate until cold.

  6. Serve chilled with fruit or crackers.
