Instructions

  1. Preheat the oven to 425 F.

  2. Chop the onion, green bell pepper, and broccoli; slice the mushrooms.

  3. Heat olive oil in a medium saucepan and sauté the chopped vegetables for 8 to 10 minutes until softened.

  4. In a blender, combine tofu, nutmeg, turmeric, basil, salt, and soy milk, blending until smooth.

  5. Stir the sautéed vegetables into the tofu mixture, then add pepper to taste.

  6. Pour the combined batter into a pie crust.

  7. Bake for 30 minutes, or until a knife inserted into the center comes out clean.

  8. Serve the quiche warm.
