Vegan Black-Eyed Peas

Instructions

  1. Heat olive oil in a large pot over high heat.

  2. Sauté onion and garlic until translucent.

  3. Stir in vegetable broth, black-eyed peas, water, tomatoes, tomato paste, and brown sugar; bring to a boil.

  4. Reduce heat to low, cover, and simmer for 2 hours or until peas are tender, adding water as needed.
