Vegan Banana Cake

Instructions

Preheat the oven to 350 F and lightly grease a 9-inch square baking pan.

Whisk together 2 cups all-purpose flour, 1 1/2 teaspoons baking soda, and 1/2 teaspoon salt in a small bowl.

In a large bowl, whisk 1 cup sugar with 1/4 cup neutral oil, then combine with 4 mashed bananas.

Stir in 1/4 cup water and 1 teaspoon vanilla extract.

Add the dry flour mixture, stirring until just combined and wet, avoiding overmixing.

Bake for 45-50 minutes, or until a toothpick inserted into the center is clean.

Cool the cake in the pan on a wire rack for 15 minutes, then invert onto the rack to cool completely.
