Instructions

  1. Preheat the oven to 350 F and lightly oil a 9x5-inch loaf pan.

  2. Sift together flour, white sugar, brown sugar, baking soda, salt, and cinnamon in a medium bowl.

  3. Whisk soy milk and cider vinegar in a large bowl, then let it stand for 2 minutes.

  4. Add mashed bananas, canola oil, maple syrup, and vanilla extract to the wet mixture; whisk until combined.

  5. Combine dry ingredients with wet ingredients, mixing until just combined; do not overmix.

  6. Fold in chopped nuts (if using) and pour the batter into the prepared loaf pan.

  7. Bake for 1 hour, or until a toothpick inserted into the center emerges clean.

  8. Cool the bread on a wire rack for 20 minutes before serving warm or at room temperature.
