Preheat the oven to 350 F and lightly oil a 9x5-inch loaf pan.

Sift together flour, white sugar, brown sugar, baking soda, salt, and cinnamon in a medium bowl.

Whisk soy milk and cider vinegar in a large bowl, then let it stand for 2 minutes.

Add mashed bananas, canola oil, maple syrup, and vanilla extract to the wet mixture; whisk until combined.

Combine dry ingredients with wet ingredients, mixing until just combined; do not overmix.

Fold in chopped nuts (if using) and pour the batter into the prepared loaf pan.
