Vegan Avocado Chocolate Fudge

Instructions

  1. Melt vegan margarine in a medium saucepan over low heat.

  2. Blend the melted margarine with ripe avocado until completely smooth.

  3. Return the avocado mixture to the saucepan over very low heat.

  4. Stir in vanilla extract, cocoa powder, and confectioners' sugar incrementally until fully incorporated and the mixture is thick.

  5. Optionally add chopped walnuts, then transfer the mixture to a loaf pan.

  6. Refrigerate for 4-6 hours, or freeze for 3 hours, until firm.

  7. Slice into squares and serve, garnished with sea salt if desired.
