Instructions

  1. Preheat the oven to 350 F and line a 12-cup muffin tin; core and dice the apples.

  2. In a skillet, heat dairy-free margarine and brown sugar until bubbling, then add diced apples and cook for 8-10 minutes until caramelized. Let cool slightly.

  3. Sift together flour, baking soda, baking powder, sea salt, and cinnamon in a large bowl.

  4. In a separate bowl, whisk milk, lemon juice, canola oil, white sugar, and vanilla extract until the sugar dissolves slightly.

  5. Combine the wet ingredients with the dry, then fold in most of the caramelized apples, reserving some for garnish.

  6. Fill cupcake liners 3/4 full with batter and bake for 20-25 minutes until the tops spring back when touched.

  7. Cool cupcakes in the pan for 15-20 minutes, then transfer to a wire rack to cool completely before frosting.
