Veal With Lemon and Mushrooms

A quick veal dish featuring sautéed veal with mushrooms, lemon, garlic, wine, rosemary, and parsley.

Instructions

  1. Heat olive oil and 2 tablespoons butter in a skillet over medium heat.

  2. Season veal with salt and pepper, then lightly flour it.

  3. Quickly brown veal on both sides, then remove from the skillet.

  4. Add 1 tablespoon butter to the pan and sauté mushrooms until tender.

  5. Return veal to the skillet; add garlic, lemon juice, zest, herbs, and wine. Coat the veal, cover, and simmer for 3-4 minutes.

  6. Serve veal topped with mushrooms and pan drippings.
