Instructions

  1. Preheat the oven to 390 F (200 C) and ensure all ingredients are at room temperature.

  2. Cream the butter in a mixing bowl. Continuously beat in the sugar slowly, then add eggs one at a time, and finally the brandy.

  3. While beating, sprinkle in the grated orange peel, then alternately add milk and small amounts of flour until well combined.

  4. Flour a 12- to 13-inch round baking pan and pour in the batter.

  5. Bake for about 45 minutes. Halfway through, once the cake begins to set, carefully insert a foil-wrapped coin just below the surface, avoiding the exact center.

  6. Continue baking until done. Let cool for 5 minutes, then invert the cake onto a serving plate.

  7. Allow the Vasilopita to cool completely for 4 hours before serving.

  8. Optionally, sift confectioners' sugar over the top, or coat lightly with marmalade and sprinkle with grated coconut.
