Instructions

  1. Preheat oven to 350 F.

  2. Beat butter and sugar until fluffy, then mix in eggs and vanilla.

  3. Add flour to form a smooth dough, then cover and refrigerate for 1 hour.

  4. Roll half of the chilled dough between parchment paper to 1/8 to 3/16-inch thick and cut various shapes, placing cookies 1/2-inch apart.

  5. For sandwiched cookies, cut an even number of plain cookies and an equal number of same-shaped cookies with a small window.

  6. Place parchment paper with cut cookies on a sheet pan and bake for 8-10 minutes until light but baked through.

  7. Cool completely, then repeat with remaining dough. Refrigerate excess dough.

  8. If sandwiching, sprinkle confectioner's sugar on window cookies, spread jam or filling on plain cookies, and assemble.
