Instructions

  1. Lightly roast semolina in a medium-heated griddle or skillet until fragrant, without browning; then set aside.

  2. Heat oil in a pan, then add mustard seeds, curry leaves, and green chiles.

  3. Stir in grated ginger and cook for one minute.

  4. Add onion and fry until translucent and soft.

  5. Incorporate tomatoes and cook until softened.

  6. Pour in hot water, turmeric, and salt, then bring the mixture to a boil.

  7. Gradually stir in the toasted semolina, ensuring no lumps form.

  8. Simmer until the upma thickens to a very thick porridge; then turn off the heat.

  9. Stir in lime juice, then garnish with chopped cilantro and serve hot.
